Gluten-Free Flour Options
As the only AIP bakery nationwide, we specialize in crafting delicious and nutritious treats! Our choice of gluten-free flours - tigernut, coconut, and cassava - not only complies with dietary requirements but also enhances health and well-being through their superior nutritional benefits.
- Tigernut Flour:Â Tigernut flour is rich in prebiotic fiber and essential nutrients like calcium, iron, zinc, folic acid, potassium, and vitamins E and C. These attributes support a thriving gut microbiome and strengthen the immune system.
- Coconut Flour:Â Coconut flour is gluten and grain-free, high in fiber, and assists digestion. It also contains beneficial fats, making it suitable for individuals with autoimmune conditions.

Minimally Processed Cooking Oils
We prioritize using minimally processed, stable cooking oils, such as olive oil, organic unrefined cold-pressed coconut oil, and animal fats derived from pure sources like lard, tallow, and bacon grease. This approach safeguards the nutritional integrity of our meals and reduces exposure to harmful free radicals that can arise from highly processed vegetable or industrial seed oils. These oils can oxidize and become rancid when heated at high temperatures. By avoiding such oils, we protect our customers' health and well-being.
Key Supplemental Ingredients for a Healthy Diet
In addition to our prime cuts of meat and fresh produce, we also incorporate other select ingredients that contribute to our meals' health benefits and flavorful taste. These include organic vegetable shortening and gelatin.
Specifically, we use organic palm oil as our preferred vegetable shortening. It's a healthier alternative to traditional shortening as it is free from trans fats, known to trigger inflammation and other health issues. Organic palm oil is also rich in natural antioxidants and vitamin E and is abundant in beneficial fatty acids. Unlike many conventional shortenings, it does not contain harmful hydrogenated fats or additives.
We also incorporate gelatin in our recipes, which enhances gut health and immune function. Derived from selected parts of calf and cattle hides, de-mineralized cattle bones, and pork skin, gelatin provides a rich source of collagen, which is crucial for individuals following an Autoimmune Protocol (AIP) diet.
