Salmon:
In our quest to find the highest quality products, we do not always find exactly what we want. We've been looking for a sustainable and available source of wild caught salmon at a reasonable price to no avail. Until we can find a good source for wild salmon (most likely only in summer months), we've chosen to use the next best alternative we can find, which is farm raised. They follow a specific set of standards that goes above and beyond basic regulatory practices. We haven't seen their practices first hand, but from our research, it appears they're working to improve the health of their farmed fish and to mimic a the wild diet of salmon while allowing them room to swim. Any fish on our menu that is WILD will say WILD in the description. The Scottish Salmon is NOT wild. It is, however, a step above the traditional farm raised fish. We are cooking limited amounts of this salmon, as we want to offer wild caught salmon when it becomes available.
Cooking Oils:
We do no use ANY highly processed vegetable oil, industrial seed oils, or any oils that are easily damaged by high heat. We use stable cooking oils that are minimally processed. When fats are damaged they release free radicals that are dangerous to the body. Vegetable oils and other polyunsaturated oils become rancid when processed and heated at a high temperature. We use traditional, stable cooking oils to reduce exposure to free radicals.
Our cooking oils:
- Olive Oil
- Organic, unrefined, cold pressed coconut oil
- Rendered fat from quality animals (lard, tallow, bacon grease)
How We Buy Our Produce:
Due to availability and with your budget in mind, we source our produce following the Dirty Dozen/Clean Fifteen list from the Environmental Working Group. This means that we make sure we buy items on the “Dirty Dozen” organic and buy conventional if necessary only from the “Clean Fifteen” list.
Other Products We Use:
All-natural, first press, “extra virgin” Vietnamese fish sauce. It does not contain added water, preservatives or MSG. Made from a two hundred year-old, chemical free, artisanal process. - a great soy alternative made with certified organic Coconut sap-naturally aged and blended with sun dried, mineral-rich sea salt.- sea salt includes other trace minerals besides just sodium that are vital for your health. Table salt is pure sodium chloride (along with added iodine) while sea salt contains all the electrolytes: sodium, potassium, magnesium, and calcium. It also tastes better and you don't need to use as much.
