Carob Chunk Cookies

It’s everything you want a cookie to taste like, and AIP! … Everybody loves Chocolate Chip Cookies. Unfortunately, many people avoid chocolate as it can be inflammatory and is excluded from the AIP Diet. We’re cookie lovers at POTG, so we asked ourselves “Can we make a classic-tasting cookie with homemade carob chunks instead of chocolate chips?” Yes, we can and yes we did! Introducing our new AIP Carob Chunk Cookie! These cookies are best cold or frozen! In the process of creating carob powder, the carob is roasted which enhances the flavor. This roasting combined with baking the cookie can from time to time can give them a slightly burned flavor. Reheating the cookie in your home can enhance that burnt flavor sometimes. Please be assured that the baking process is monitored and the cookies aren't shipping out burned. We like them best right out of the freezer! PS The beauty of handmade food is that it doesn’t have to look perfect to be perfect. If what you receive looks a bit different from a photo or what you got the last time, know that it’s because it was made by an awesome human with love, not a machine.
Cassava flour, palm shortening, carob chunks (palm shortening, coconut butter, carob powder, coconut sugar, vanilla extract, sea salt), maple syrup, coconut sugar, grass-fed beef gelatin, vanilla extract, baking soda, sea salt
Thawing: Must be received and stored frozen until “use-by” date. Can be held refrigerated for up to 3 days prior to consumption. Thaw and eat or enjoy frozen. We suggest eating while still somewhat cold.
