The Earl of Sandwich, John Montagu, is often named as the inventor of the "deli sandwich". He was a gambler and in an effort to continue gambling and not have to get up from the gambling table he asked that his dinner be placed in between two slices of bread. The rest is history. But, what if you don't eat bread? They didn't have Nori sheets back then, but we do.

For those who don't or can't eat grains, enjoying a nice sandwich with your favorite deli meats can be a challenge. Even gluten free bread is full of unsavory ingredients. By using the Nori sheets traditionally used for sushi you can enjoy your favorite deli meats at your convenience. The Nori is used in place of bread and the "sandwich" is built like a sushi roll. You will need a sushi roll mat just like they use in your favorite sushi bar. Get all your favorite sandwich fixings together and start building. These are great for taking to work or for kids lunches. Or pack a lunch and go for a hike! Don't limit yourself to just deli meats- be creative! Tip From The Chef

Nori can get soggy because it's absorbent. Use romaine lettuce leaves if this is an issue or apply condiments to the inside layer.

NORI SANDWICH ROLL-UPS

Nori Deli Roll Ups Paleo

Serves 8

INGREDIENTS

  • 1 package Sushi Nori sheets
  • 1 package Applegate Farms Turkey Breast
  • 1 package Applegate Farms Ham, any type
  • 1 package Applegate Farms Salami, any type
  • 8 lettuce leaves
  • 2 tomatoes sliced very thinly
  • ½ red onion sliced very thinly
  • 1 cucumber, peeled and sliced very thinly
  • 1 avocado, sliced very thinly
  • Mayonnaise to taste
  • Mustard to taste

ITALIAN SUB DRESSING

  • ½ cup olive oil
  • 3 tblsp. red wine vinegar
  • 1 tsp. dry oregano
  • 1 tsp. sea salt
  • 1 tsp pepper

FOR THE ITALIAN SUB DRESSING

  1. Add all ingredients to a covered container, replace lid and shake till blended

FOR ROLLUP

  1. lay out one nori sheet – cover with single layer of your choice of cold cuts, add your vegetables horizontally along the center line of the roll and spread some mustard, mayo or dressing down the center.
  2. Carefully roll the nori, tucking in all the leaves and loose bits to keep the roll tight.
  3. Brush a little water along the top edge of the nori to seal it when you complete the roll.
  4. Wrap the roll in a piece of parchment, aluminum foil or wax paper and you have a quick healthy on the go lunch.
