It's no mystery why the fanciest of fancy restaurants love to use duck fat for their potatoes. The taste is simply unparalleled to any other fat or oil when cooking tubers. Duck fat tends to make potatoes (and sweet potatoes alike) irresistibly crispy, as well.

This awesomely minimalist recipe lets the flavor of the sweet potatoes and duck fat shine. Aside from the sea salt, that's all it calls for! This pairs perfectly with any meat dish or even as a classy upgrade from your everyday home fries at breakfast. Enjoy!

DUCK FAT SWEET POTATOES

INGREDIENTS

  • 2 large white sweet potatoes
  • 3 T. duck fat, melted
  • Sea salt

INSTRUCTIONS

  1. Preheat oven to 425. Peel and chop potatoes into 1” cubes. Toss in melted duck fat and spread out on parchment lined sheet tray. Roast in 425 oven for 20 minutes until golden. Remove and sprinkle with sea salt.
