AIP Sweet and Sour Chicken Wings
These are great wings! The bonus is that they are completely AIP compliant. You can serve them to your guests and they will never know they are eating an AIP dish. Cooking the wings at a higher heat will crisp up the skin as if it were fried. Once you remove them from the oven and toss with the sweet and sour sauce you'll be in wing heaven. They are crispy and sweet with a nice tang from the apple cider vinegar. One of the best parts is what an easy recipe it is to put together. INGREDIENTS
- 3-4 lb chicken wings
- Seasoning: 2 T. sea salt, 2 T. garlic powder
SAUCE
- 1 cup coconut sugar
- 2 Tbl. Coconut aminos
- 3 Tbl. Apple cider or coconut vinegar
- ¼ tsp ground ginger
- 1 cup pineapple puree (canned or fresh)
- 1 clove garlic, crushed
- 5 scallions, thinly sliced for garnish
INSTRUCTIONS
- Cut the wings at the joint and discard tips.
- Pat wings dry with paper towels and sprinkle with seasoning blend.
- Lay the wings out on parchment lined trays and roast for 45 minutes in a 375 oven until crispy.
- For the sauce, place all sauce ingredients in a medium saucepan; stir well to combine.
- Heat to boiling over medium-high heat. Then reduce heat and simmer until sauce is reduced by half. It should look like a thin syrup when it's done. This should take about 10-15 minutes.
- Place cooked wings in a large bowl, add the sauce and toss to coat. Sprinkle with the sliced scallions
