AIP/Paleo Chicken Souvlaki
What is Souvlaki? Wikipedia defines it as a popular Greek fast food consisting of small chunks of meat grilled on a skewer served with tzatziki and often pita bread. Our chef has replicated a Chicken Souvlaki recipe, making it AIP. The simple, fresh and clean ingredients are wrapped up in one of our delicious POTG AIP Tortillas which takes the place of the pita. Top it with the tzatziki (dairy free) and this dish is sure to be a crowd pleaser. Our Souvlaki recipe is a nice easy dish that goes together quickly. Fresh herbs, lemon and tzatziki all wrapped up in a tortilla will take you away to the Greek Isles. Definitely make this!
AIP/Paleo Chicken Souvlaki
CHICKEN SOUVLAKI
Serves 2
CHICKEN
- 1lb chicken Breast or thigh
- 6 Tortillas
- ¼ cup olive oil
- ¼ cup lemon juice
- 2 T. fresh chopped oregano
- 2 tsp. salt
TZATZIKI SAUCE
- 1 cup Coconut Cream
- ½ Cucumber, finely minced
- 3 T. Lemon juice
- 2 T. Dill, chopped
- 1 T. garlic
- 1 tsp. salt
FOR THE CHICKEN
- Cut chicken into bite sized pieces.
- Marinate in the olive oil, lemon juice, oregano and salt.
- Thread chicken onto skewers and grill over high heat until browned, or broil or sauté until cooked through
FOR THE TZATZIKI SAUCE
- Mix all sauce ingredients together and chill.
- Warm tortillas in a 350° oven on a tray.
- Remove and divide chicken meat evenly amongst the 6 tortillas
- Top with the tzatziki sauce.
