Paleo Shake-n-Bake

'It's Shake and Bake, and I helped!' was the tagline of a commercial I remember when I was little. The original product has been an American staple for decades, bringing oven fried chicken to the masses. But we're Paleo on the Go and all the additives in the original simply will not do. We've created a clean, paleo version using only real food. This recipe makes a good amount of the mix so whatever you don't use can be kept in the refrigerator or freezer until you are ready to make more. You can use this 'Paleo Shake n Bake' on any meat you choose; chicken, pork or fish!

Paleo Shake & Bake

PALEO SHAKE-N-BAKE

Serves 6

INGREDIENTS

  • 1 cup cassava flour
  • 2 cups coconut flour
  • 1 T. arrowroot powder
  • 2 t. paprika
  • 2 t. onion powder
  • 3 t. sea salt
  • 2 t. coconut sugar
  • 3 t. dry sage
  • 2 T. chopped parsley
  • 4 T. olive oil

INSTRUCTIONS

  1. Combine dry ingredients in a mixing bowl; mix well.
  2. Add oil.
  3. Mix well until combined.
  4. Place in zip-top plastic bag and store in freezer.

TO USE

  1. Preheat oven to 400 degrees F.
  2. Line a sheet tray with parchment paper.
  3. Cut up a whole chicken into 8 parts.
  4. Moisten each piece of meat with water.
  5. Shake off excess water, and shake in bag of mix to coat, one piece at a time.
  6. Place in baking dish and bake for 30 minutes or until done, depending on size of pieces.
  7. **Store unused mix in freezer. Can be used to coat chicken, pork, or veal.
