Cannoli Pudding (AIP) - POTG Test Kitchen

Here is another dish that traditionally you wouldn't be able to eat on the Autoimmune Protocol because of the Ricotta Cheese. Yes it is true that cheese isn't easy to replace in a recipe, especially in a dessert but that doesn't stop Chef Ann! So if you are in need of something like the cannoli filling give this recipe a try. And if you have started reintroducing foods into your diet, add chopped pistachios and carob or chocolate chips. Delizioso!

CANNOLI PUDDING

Serves 12

INGREDIENTS

  • 1 cup coconut flour
  • ½ cup maple syrup
  • 2 cups coconut cream
  • 1 cup coconut milk
  • ¼ tsp. Ground Cinnamon
  • 2 T.. Vanilla Extract
  • 2 T. Orange Zest
  • Optional: finely chopped pistachio nuts, sugar free mini chips

INSTRUCTIONS

  1. Combine the coconut flour, coconut milk, cream, maple syrup, vanilla, cinnamon and orange zest in a medium bowl.
  2. Let stand for an hour to fully absorb.
  3. Serve in small dessert bowls with optional sprinkle of sugar free mini chips or chopped pistachios.
  4. Serve cold.
