This is a light, flavorful AIP soup perfect for the summer months. An AIP alternative to gazpacho, our Avocado Cucumber Soup is served chilled. A nice big salad to serve alongside would make this a great filling meal on a warm summer's evening. Using our Lemon Dill Avocado Sauce as the base, the addition of more avocado, cucumbers and coconut cream make this a thick hearty yet, light soup. A lovely addition would be to serve it with some of our Southern Style Biscuits too!

AVOCADO CUCUMBER SOUP (AIP)

AIP Avocado Cucumber Soup

Serves 2

INGREDIENTS

  • 1 container Salsa Verde
  • 1 avocado
  • 1 cup coconut cream
  • 1 peeled, seeded cucumber
  • 1 cup water
  • 2 tsp. sea salt

INSTRUCTIONS

  1. Put the salsa verde into a blender with the flesh of one avocado, one cup of coconut cream, the flesh of one peeled, seeded cucumber, water and salt and puree until smooth for a cold soup. Top with poached shrimp or chicken if you like.
