Chicken "Pozole" Verde

Pozole is a traditional Mexican soup or stew that is made with hominy. Of course, hominy or corn is just one of the ingredients in a pozole that isn't allowed on the Autoimmune Protocol. Chef Ann uses horseradish to give the dish a little zing that would normally come from chilies and the hominy is replaced with riced cauliflower. If you are in need of a Mexican food fix, this will do it! Top with some chopped cilantro, sliced avocado, and radish then sit back and enjoy Mexican food on AIP! Organic free-range chicken, free-range chicken broth, lime juice, cauliflower, kiwi, onion, carrots, celery, garlic, cilantro, horseradish, oregano, arrowroot, sea salt, parsley, bay leaves

Thawing: Must be received and stored frozen until “use-by” date. Can be held refrigerated for up to 3 days prior to consumption. Reheating: Remove container from freezer and defrost in refrigerator. Oven - Remove film from container. Cover with foil and place on cookie sheet. Heat in oven for 18-20 minutes until hot all the way through (165°F). Microwave - Pull back film on tray to vent. Microwave on high for 3 minutes until hot all the way through (165°F). Trays are not toaster oven safe.
