Beef Bourguignon with Japanese White Sweet Potato Mash

Originating in France, Beef Bourguignon is a classic dish enjoyed the world over. Also known as Beef Burgundy, it is basically a fancy beef stew cooked with red wine. Of course since we're AIP there is no wine used in this dish. Chef Ann took on the challenge of creating the flavor found in the original while keeping it fully autoimmune compliant. Loaded with chunks of grass-fed beef, carrots, mushrooms, and pearl onions in a rich gravy, we serve it with a delicious Japanese White Sweet Potato Mash.  Enjoy!
Beef Bourguignon with Japanese White Sweet Potato Mash
  • grass-fed beef chuck

  • 24 hour grass-fed beef bone broth
  • no tomato marinara sauce
  • Native Forest coconut milk (organic coconut, purified water) *BPA free cans, no Guar gum
  • carrots
  • sugar free bacon
  • balsamic vinegar
  • extra virgin olive oil
  • garlic
  • arrowroot powder
  • sea salt
  • organic parsley
  • Must be received and stored frozen until the “use-by” date. It can be held 3 days under refrigeration prior to consumption.

    Thawing and reheating instructions:  Remove tray from the freezer and defrost overnight in the refrigerator. Oven: Preheat oven to 350°F. Remove the film from the container, cover with foil, and place it in the oven on a sheet tray. Reheat 20 to 25 minutes until hot all the way through (155°F).

    Microwave: Pull back film on both sides of the tray to vent. Reheat in microwave 3-4 minutes until hot (155°F) all the way through.

    **Our trays are not toaster oven safe.**
