Beef Bourguignon with Japanese White Sweet Potato Mash

- +
Originating in France, Beef Bourguignon is a classic dish enjoyed the world over. Also known as Beef Burgundy, it is basically a fancy beef stew cooked with red wine. Of course, since we're AIP there is no wine used in this dish. Chef Ann took on the challenge of creating the flavor found in the original while keeping it fully autoimmune compliant and Whole30 Approved®. Loaded with chunks of grass-fed beef, carrots, mushrooms, and pearl onions in a rich gravy, we serve it with a delicious Japanese White Sweet Potato Mash.  Enjoy!
Grass-fed beef chuck, organic Japanese white sweet potato, pearl onions, mushrooms, grass-fed beef bone broth, no tomato marinara sauce (beets, sweet potatoes, carrots, onions, garlic, organic balsamic vinegar, lemon juice, basil, oregano, salt), coconut milk (organic coconut, purified water), carrots, sugar-free bacon, organic balsamic vinegar, extra virgin olive oil, garlic, arrowroot, sea salt, organic parsley
