Chicken "Pozole" Verde

- +
Pozole is a traditional Mexican soup or stew that is made with hominy. Of course, hominy or corn is just one of the ingredients in a pozole that isn't allowed on the Autoimmune Protocol. Chef Ann uses horseradish to give the dish a little zing that would normally come from chilies and the hominy is replaced with riced cauliflower. If you are in need of a Mexican food fix, this will do it! Top with some chopped cilantro, sliced avocado, and radish then sit back and enjoy Mexican food on AIP! Order some of our Paleo/AIP Tortillas to make tacos out of our "pozole"!
