After consulting with licensed doctors and practitioners we have made adjustments to the recipe so that it is more in-line with recommended daily nutritional values. Same great flavor with balanced nutrition! Mole is a traditional sauce used in Mexican cuisine. The word “mole” is a derivative from an Aztec word and it simply means “sauce”. But it has come to be associated with a sauce made with various spices, chilies, and cocoa powder. The flavors are dark and mysterious with layers of flavor. With so many ingredients that are non-AIP, how can this dish be compliant? Executive Chef Ann Lotterhos worked diligently to recreate the traditional sauce with strictly AIP ingredients. Try some today, you will be surprised by the layers of rich flavor in our new Chicken Mole, perfectly paired with our new Guacamole Rice.
